Those of you in the foodservice industry have likely noticed the burgeoning demand for products that are locally and sustainably grown. Consumers are increasingly becoming concerned with (and aware of) the origin of the food they’re eating, as well as the agricultural practices used in their production. While veal from New Zealand or tomatoes from Mexico might be the most convenient and cost-effective products, many diners are now asking the harder questions about how you source the ingredients for the dishes on your menu.
We at ChefMod have begun to field more inquiries from our customers about sourcing these sustainably grown local products. Just as we have with organic and all-natural products, we are constantly working with our existing purveyors (as well as connecting with new ones) to expand our catalogue and present new options to our clients. Especially as summer is getting closer and closer (thank good fortune!), we are eagerly anticipating the new season of fresh corn, tomatoes, and other delicious produce grown here on the East Coast.
Keeping up with the most sustainable and environmentally friendly options is not always so easy, however. We recently tweeted about where is my milk from?, a nifty little site that gives you information about, well, where your milk is from. We’ve discovered another useful resource: Seafood Watch, published by the fine folks at the Monterey Bay Aquarium on California’s beautiful Central Coast. Seafood Watch’s Buyer’s Guide divides just about every species imaginable into three categories — Best Choices, Good Alternatives, and Avoid — so that you can make informed purchases. They also have put together a guide you can access on your mobile device, for when you’re agonizing over a tough decision at the grocery store (read: Union Square Greenmarket). Finally, their Sustainable Sushi page – surprisingly not the name of Osaka’s latest new-wave punk band – is sure to tickle every foodie’s fancy.
